Design intent

At the entrance of Filandón, a renowned gastronomic restaurant located on the El Pardo hillside in Madrid, rises a greenhouse designed architecturally and entirely created by Trenchs Studio. A serene and elegant volume that functions as both a shop and a gastronomic showcase, it extends the restaurant experience beyond the table, inviting visitors to discover the origin of the products.

From the structure to the furniture and lighting, every element was designed from scratch to integrate naturally with the surroundings and convey the identity of the place. The project stems from a genuine and honest need: to make visible what gives meaning to the cuisine. It offers customers the opportunity to purchase the vegetables and produce from the restaurant’s own farm, Granja de los Monjes, located in El Bierzo, which are used to prepare the dishes on the menu.

This commercial space design strengthens the connection between territory and gastronomy and is complemented by a curated selection of preserves and specialties from Pescaderías Coruñesas, alongside Lhardy liquors. The greenhouse thus becomes a retail space where products are displayed without artifice, emphasizing their origin, seasonality, and quality.

The design draws inspiration from classic European greenhouses, reinterpreted through a contemporary and romantic lens. The aluminum structure, with elegant lines and delicate proportions, encloses a space designed to offer comfort year-round, where light, temperature, and the relationship with the outdoors are naturally balanced. The roof incorporates wooden slatted blinds in the Alicante style, painted in an olive green tone that harmonizes with the landscape and helps integrate the building into its environment. These blinds regulate the light throughout the day and across seasons, reinforcing the greenhouse’s changing, domestic, and inhabitable character.

Inside, this sense of shelter is expressed through an atmosphere reminiscent of an orangerie or winter garden. Dark herringbone natural wood flooring adds warmth and visual continuity, while a large central table made of wood and natural stone, also designed as a display counter, organizes the circulation and experience, subtly separating the customer pathway from the exhibition area.

At the back, a tobacco-toned oak cabinet houses preserves and packaged gourmet products. At the front and exterior, a selection of fresh produce from the garden is displayed on custom-designed natural bronze circular pedestals, arranged flexibly to reinforce the direct connection between space and product.

The lighting, warm and focused, highlights textures, colors, and volumes, creating a cozy and romantic atmosphere where the true protagonist is the product itself: fresh, honest, and seasonal.
